I will host an intimate culinary experience for 4 guests per session, as droog's very first “chef in residence” at their one-and-only Hotel Room.

My passion has always been about holding dearly of tradition and offering the whole culinary experience. This pursuit is now translated into an intimate dinner experience where I make sushi in front of you, and serve with the crockeries brought from Japan. We also handpicked premium sake to elevate this culinary journey.

Taking over the Spanish Bar counter

Located on Houtmankade, this charming Spanish bar Pikoteo graciously reserves its bar counter exclusively for ASA's guests. Thanks to the warm and welcoming team at Pikoteo, the setting exudes friendliness and liveliness. Hosting only six guests, I curated an intimate sushi experience that was completely immersive and unforgettable.

Vegan Eel DON

I celebrated the Japanese “Eel Day” with Dutch friends. Originating from the Edo period, the tradition of Eddl Day traces back to the efforts of the esteemed academic, Mr. Gennai Hiraga. Mr. Hiraga, a pioneer of Rangaku (the study of Western sciences in Japan), advocated for increased consumption of eel during the summer months. Given his notable impact on the relationship between Japan and the Netherlands, it's only fitting to honor Eel Day in Amsterdam as well, with plant-based grilled eel.

World Vegan Day Dinner

We celebrated the 'World Animal Day' in collaboration with the acclaimed Dutch chef Jaimie van Heije. Welcoming both omnivore and vegan clients, we fostered a positive atmosphere, infusing our produce with the essence of high-end cuisine.

Vegan Sushi Bar @ Hox

In collaboration with Hox Herengracht, Amsterdam, I hosted my very first public event. The event sold out rapidly, highlighting the strong interest people have in plant-based culture. Engaging with guests at the counter, we exchanged perspectives with like-minded individuals on our planet and culinary challenges. This marked the beginning of my new vegan sushi journey.
